Step-by-step: Marinated roasted peppers for tapas or salad

Serves 4-6 as part of a tapas platter

4 yellow, green and red peppers (your choice)
Fresh parsley
1 bottle Pronto Mama Salad Splash
Olive oil

Here’s how:

1. Preheat your oven to 190C.
2. Cut the peppers in half and take out the pith and seeds.

3. Line a baking tray with foil, drizzle them with olive oil and roast for about 40 minutes until tender and showing a little bit of colour.

4. Cut the peppers in strips.

5. Now cover the strips with chopped parsley and enough Pronto Mama Salad Splash to cover the mixture.

6. That’s it. Ready to enjoy with some cheese or cold meats, with a salad or couscous.  You don’t even have to chill the mixture but give it a week or two and it will be even more delicious!
